As the leading journal in its discipline, the Journal of the American Society of Brewing Chemists (JASBC) aims to bridge the gap between fundamental and applied research in the fields of brewing, distilling, winemaking, fermented beverages, and other closely interrelated disciplines. JASBC publishes high-quality, peer-reviewed research articles, review articles, research letters, notes, and methods detailing the latest technological and scientific advancements from industry and academia. JASBC publishes research on beer, distilled spirits, wine, and other fermented beverages, along with their raw materials, process aids, and byproducts. Topics of interest include, but are not limited to: chemistry relating to all major and minor components microbiology, biochemistry, and production science of fermented beverages new, novel, or improved methods used in evaluation and analysis physical/chemical composition, product stability, quality, and food safety advances in sensorial evaluation and consumer perception emerging technology and process improvements sustainability Please note, papers on therapeutic/clinical applications or those that employ non-human experimental trials will not be considered for publication.
